My friend said that her colleagues will go bananas over this minion steamed cakes! Hope you like them, I had so much fun making them.Â

I refined the deco steamed cakes as I found that my earlier recipe was not as good (giving inconsistent results).Â

Minion Steamed Deco Cakes
Hotcake mix 150g (I used Morinaga hotcake)
Plain yoghurt 100g (no sugar)
Sugar 50g
Baking Powder 2 tsp
Salad Oil 1Tbsp
Egg (small) 2 (approx 72~74g)
Natural Food ColoringÂ
Vanilla Essence 3 to 5 drops
Plain Flour 2tsp
(1) Hotcake mix, yogurt, baking powder, sugar, salad oil, egg, vanilla essence – Mix well to form the dough
(2) Scoop 2tsp of the dough mixture and add 1 tsp of plain flour and blue food coloring
(3) Scoop 2tsp of the dough mixture and add 1 tsp of plain flour and dark brown food coloring
(4) Put (2) and (3) into separate piping bags
(5) Divide the dough in (1) into your muffin cups, fill them to about 80% full
(6) Pipe and draw the patterns you want for the deco cake. In this case, the blue colour is the jumper of minion and the dark brown is the eyes and specs.
(7) Place them on a steaming rack and steam at low heat for about 12 mins

Hi Shirley, I copy your idea and recipe and made my own minion steam cake (posted and link back to you),though mine was not as nice as yours. Hope you don’t mind if I ask few question here : 1) do you place the paper cup on other aluminium/ stainless or ramekin when steam the cake? I place my cup on square baking tray and they become a bit wet and soggy at the bottom. 2) I understand that you develop the recipe from your own, just wonder if you have Junko’s steam cake book,I have the chinese version and mum help me to translate but I did not able to get the right result and the batter was way too thick, do you think it was due to the flour as well that need to use pancake mix? If you don’t have the book then just ignore this. Thanks a ton in advance :D

Hi dear! I am soooo sorry, I just realised that I missed out sugar when I was typing out the recipe. Please see the revised recipe.
If you have the aluminium cups, better to put, but the trick is to use low heat to steam.
Also ensure that the pot cover is wrapped with cloth, so that it prevents water from dripping on the cakes and the steaming rakes. I hope this helps!
I also have the Junko book. Her recipe did not work well for me as well. Thats why I developed my own. For me, when I use Junko book, the top part always splits open, the whole picture is gone. From my understanding, Junko recipes also uses hotcake mix.

Hi Kha Lam, perhaps you can try the other pre-mix hotcake or pancake mix brand. Unfortanately, I developed this recipe using Hotcake mix, have not tried working out the normal flour version.
