Homemade Strawberry Tart |
I love Japanese fruit tarts! The pure indulgence of fruits on custard and a nice baked crust is amazing!
I have always admired (and eaten) the beautiful varied fruit tarts sold at Japanese cafe in Japan and also in Singapore.Â
It seems rather daunting to try to make one on my own. But I decided to give it a go!Â
The crust was a little too crumbly but overall I think my homemade strawberry fruit tart turned out pretty okay :)
If you like to try this out too, here is the strawberry fruit tart recipe from Cookpad :) The only changes I made was to omit the whipped cream.

My tart tray was about 18cm wide.Â
(1) Tart Crust
110g flour
1 Egg yolk
30g almond powder
60g unsalted butter
50g powdered sugar
1g salt
- mix the ingredients in a large bowl. At first, they will resemble crumbs, just knead them a little and they will come together.Â
- wrap in cling wrap and store in the fridge for at least 30mins
- roll out the dough into a large flat round dough and lay it on your tart tray. if there are gaps, just using the leftover crumbs and fill it up.Â
(2) Custard Cream
200ml of milk
60g sugar
20g corn flour
2 egg yolks
- Heat milk in a small saucepan until boiling, remove from heat.Â
- Add in the rest of the ingredients and mix well.Â
- Return saucepan to stove on low heat. Keep stirring as the mixture thickens.
- Remove from heat, remove 35g for use in the custard base, place the rest of the custard cream into a container and store in the chiller for at least 1 hour before use.Â
(4) Custard Base
30g almond powder
30g powdered sugar
35g custard cream
30g butter
1 egg
- mix everything in a large bowl. You will have a cream like mixture.Â
- Place the mixture in the tart tray (the tart tray is already with the tart crust)
- baked for about 35mins at 170 C
- let the tart completely cool and remove it from the tart tray
(5) Assembling the Tart
- Place custard cream from step (4) into a piping bag and pipe it on top of your custard base.Â
- Place the strawberries in a circular fashion. The one in the centre is a whole strawberry, and place the strawberry halves around. If you like my arrangement, I added strawberry slices at the outermost ring and also topped with a handful of blueberries.
(6) Glaze for fruits
40g of strawberry jam
0.5 tablespoon of water
a few drops of lemon juice
- heat the above mixture in a microwave for 20seconds at 700W
- let it cool slightly. Using a pastry brush, brush a thin layer on top of the fruits. This will give it a nice shine!

hello your recipe looks so yummy i cant wait to try it. but it’s kinda hard to find almond powder in my country. is it ok if i dont use it? thank you :)

Hello, thank you for the comment. Please do take a look at my updated tart recipe. :) For the tart base, you can simply use a digestive biscuit tart base in replacement if almond powder is too difficult to get :)
