I have been wanting to baking some matcha cookies, glad that I finally did it! Baking is still a challenge to me so I am still learning along the way. I hope you will like this recipe that I found on Anh’s Food Blog (credit link below).

Matcha Cookies Recipe
240g all purpose flour
15g green tea powder (matcha)
150g unsalted butter, softened
130g powdered sugar
Pinch of salt
2 egg yolks
1/3 cup white chocolate chips
Method
1. Cream butter, sugar, egg and salt until smooth and creamy.
2. Sift in both the flour and the matcha powder. Mix well.
3. Fold in the white chocolate chips.
4. Shape the dough into 4 round logs and wrap them in cling wrap. Place your log in a recycled toilet roll to help it stay cylindrical. Chill in refrigerator for several hours or, better yet, overnight.
5. Preheat oven to 150C. Remove the dough from cling wrap and cut into cookie slices of about 7mm thick. Bake for 20-22 minutes then cool on a rack.
