Spice Brasserie – Battle of the Crabs

Which Singaporean doesn’t love crabs? I am sure many are fans of our local crab dishes.

You will be happy to know that PARKROYAL on Kitchener Road (Singapore) is now offering a brand new buffet dinner feast at their Spice Brasserie restaurant – Battle of the Crabs dinner from Thursday to Saturdays.

Helmed by their new Executive Chef Low Hoe Kiat, expect local crab classics such as the Singaporea Chilli Crab and Black Pepper Crab, as well as Salted Egg Yolk Crab, Teochew Cold Crab, Rock Salt Crab and worth his own signature creations – the Slow-Braised Pumpkin Crab in Claypot and the Stir-Fried Crab in Asian Spices.

Executive Chef Low has over 20 years of culinary experience and aims to bring to the dining table, homely dishes and recipes that has been passed down generations.  Chef Low has fond memories of homely dishes that are now hard to find outside or too complicated to cook. For instance, he uses a 20 year-old chilli recipe for his signature fried rice dish (which I enjoyed very much).

To ensure freshness and quality of the food, Chef Low uses only fresh crabs in the dishes!

When you step into Spice Brasserie at PARKROYAL on Kitchener Road, you will be greeted with a warm decor of wooden chairs and white furniture, a nice unpretentious charm. Located at the lobby level of PARKROYAL on Kitchener Road, the hotel is easily accessible by mrt too (Farrer Park station along North East Line). If you are not a fan of crabs, not to worry, their extensive buffet spread features a wide range of local and asian cuisines, as well as fresh seafood, sashimi and live cooking stations. You can also opt for their regular buffet lunch and dinner.

Time to talk more about the food and the crabs!!!

The highlight of the crab dishes was definitely Chef’s signature dish, Slow-Braised Pumpkin Crab in Claypot. I can probably finish one serving on my own.

We were all very impressed by his Slow-Braised Pumpkin Crab in Claypot. That yellow-golden pumpkin gravy was so delicious and creamy, the well matched flavours of the pumpkin and crab, a dish that leaves you yearning for more.

In fact, over the course of our media tasting session, we actually had to stop the helpful servers from clearing away the claypot (which of course had no more crabs left), as we were just enjoying that creamy smooth gravy. Definitely worth the calories! And remember to order some fried mantou to dip into the gravy!

His other signature crab dish, Stir-Fried Crab in Asian Spices surprised me too. I had imagined overpowering spices but this dish was the opposite, a very interesting blend of spices that still allow me to taste the sweetness of the crab meat. The asian spices does give this dish a home style taste.

Usually I would say avoid carb dishes for buffet, but this fried rice, I say go for it. It is so worth the space in your tummy. Aside from the good ‘wok hei’ (breath of wok) in this fried rice, I love the ending spicy kick. The fried rice looks innocent, but this is a spicy dish and would please most Singaporeans.
