Since I have a lunch appointment, I decided to pack a breakfast bento. To lazy to think of complicated designs, so I made used of my The Bear School Silicon Mold and baked some bear shaped chocolate hotcakes. 

Perhaps I should have kept them original flavour only because I think they looked better. haha.  Having said that I do prefer the light chocolatey flavour in this recipe.

The texture was a moist soft cake that tasted almost like a cross between cakes and hotcakes, and  yummy even when cooled.

I have included the recipe in today’s post below. 

I plated some of  The Bear School cakes for breakfast and packed some in my bento box. Check out my new Ito Salad Plate from Crate & Barrel that I bought recently.

The side dishes were simple. Some blanched french beans tossed in Japanese onion dressing, cherry tomatoes and SunMoon Fruit Cup fruits.

SunMoon Fruit Cups are really my saviour when I am in a rush of time. Plus I really like how they are packed in small servings cups.

For my The Bear School Bento, I just brought one Sun Moon Fruit Cup (mixed fruits) along with the bento box, super quick and easy.

Recipe for Baked Chocolate Hotcakes

Ingredients (makes approx 8)

  • Morinaga hotcake mix 150g
  • Cocoa Powder 3g
  • Cream 150ml
  • Maple syrup 1tbsp
  • Chocolate sauce 1 tsp (optional)
  • Melted butter 1tbsp
  • Egg (small size) 1
  • Milk 80ml

For details

  • Chocolate pen (black). You can also use dark chocolate to pipe the designs, or just leave them as they are.

Method

  1. In a mixing bowl, add in egg and maple syrup. Whisk and mix well.
  2. Add in the remaining wet ingredients – cream, chocolate sauce, melted butter and milk. Mix well.
  3. Sieve and add in hotcake flour and cocoa powder. Mix well.
  4. Fill the silicon mold up to about 80% and bake at 180C for 25mins.

      The recipe is way to easy as I used Morinaga hotcake mix. They give me the fluffiest pancake and I love the taste ;D
