Known to explore local infusions into Tiong Bahru Bakery baked goods, Celebrity French baker Gontran Cherrier has decided to take a more traditional route this round.
At Tiong Bahru Bakery, get ready for 8 new well-loved classics that employ traditional French baking techniques – Paris-Brest, Chocolate and Lemon Meringue Eclairs, Mixed Berries Tart, Slipper Chocolate Tart, Vanilla Mille Feuille, Opera Cake and Tropical Cheese Cake.
My favourites amongst these eight would be the Paris Brest and the Vanilla Mille Feuille. Following close behind is the Mixed Berries Tart and Slipper Chocolate Tart.
Good quality choux pastries are not easy to find here in Singapore.
One would exact a crisp outer shell with that light soft airy middle.
In addition to its beautiful doughnut shape presentation, the Paris-Brest has a satisfying crisp Craquelin topping, filled with smooth and rich Praline cream.
A quality Mille Feuille needs a superb crispy flaky puff pastry.
Also known as thousand leaves, this classic French dessert by Tiong Bahru Bakery delights with general amounts of vanilla pastry cream between the flaky pastry squares.
I love my desserts with crust and textures, which is why tarts are often my top choices.
Who can say no to sweet shortcrust pastry and that rich, buttery, biscuit-like sturdy tart shells, yummy!!
The Mixed Berries Tart is filled with a jammy mixed berries confit, vanilla cream and topped with fresh berries with a sturdy tart base.
The fillings were superb though slightly tart for me.
Chocolate Slipper Tart on the other hand is a decadent chocolatey choice with layers of chocolate ganache and a lovely light chocolate shell on crisp sugar dough base. Yum.
Chocolate craving? Look no further.
I also love the slipper motif design, so Singaporean! Giving this traditional French dessert a local makeover in presentation. Cute!
