Totoro Deco Steam CakeIt has been some time since I made deco steam cakes. After such a long time, I decided to make these Totoro deco steam cakes.

I made some minor tweaks to the design and the ingredients, and using Valrhona cocoa powder instead.

After some 2 years, the cakes definitely look cuter and neater too. :P

This recipe should be nothing new to most of you if you have been following my blog, but here is the updates for what I made today.Totoro Deco Steam Cake (3)

Japanese steam yogurt cakes (mushi pan)

Totoro Deco Steam Cakes

*makes 4

Ingredients

  • Morinaga hotcake mix 1pkt (150g) (some of my readers have used other ready pancake mixes too but I usually stick to morinaga cause I like the taste)
  • sugar 20g
  • eggs (small) 2
  • yogurt (I used marigold plain yogurt with sugar) 100g
  • baking powder 3g
  • salad oil 1tbsp (if you do not have salad oil, you can use usual cooking vegetable oil, you can also omit the oil entirely if you prefer a healthy recipe)
  • vanilla beans paste (0.5 tsp) optional
  • valrhona cocoa powder 1 tsp
  • black cocoa powder (for outlines) 0.5tsp
  • cake flour 1.5 tsp

1. In a bowl, add in the wet ingredients of yogurt, egg, salad oil, vanilla bean paste and mix well. Then add in sugar and hotcake mix flour and mix well.

2. In small bowls, add in (A) 0.5 tsp black cocoa powder (B) 1.5tsp cake flour

3. Then scoop in the batter from step 1 (A) 2 tsp of batter (B) 6 tsp of batter. Mix well. Transfer them into small homemade piping bags made from baking/parchment paper.

4. To the remaining batter, add in sifted valrhona cocoa powder and mix well. Transfer into 4 muffin cups. You should have about 2 tsp of batter left (this is for the ears later).Recipe for Totoro Cake (2)

5. Then pipe in the outlines using (A) from step 3. And fill in the rest of the design using (B) and (A). See the sequence of the design in the photo illustrated below.Recipe for Totoro Cake (3)

6. Place a steamer rack in a large pot with water, bring to boil. I place the muffin cups inside small ramekins, then on the steamer rack. Steam the cakes for about 15mins.

Point:

- The pot should be tall enough to ensure sufficient space for the rising of the steam cake

- Please use a steamer cloth to wrap the pot lid, this is to prevent water from dripping onto the cake and spoiling the designs or causing sinkage

- Please use low heat when steaming the cakes, too high heat might cause the cakes to split and destroy the designs

- As my muffin cups are very thin, I used ramekin bowls. You can also consider using double layer when steaming so that the muffin cup will not expand too much and the design will stay intact.

7. To the remaining batter from step 4. Add in 0.5 tsp cake flour and mix well. Transfer into small homemade piping bag made from baking/parchment paper.

8. Pipe the ears and you can also pipe the soot spirits (susuwatari) on baking/parchment paper. Steam for 3 mins under low heat. Peel off from the baking paper. Make small slits at the top of the steam cakes and slot in the ‘ears’ to complete the Totoro deco steam cake characters.Recipe for Totoro Cake (1)Totoro Deco Steam Cake (1)

Tuxedo Sam Deco Steam Cake (5)Presenting to you – Tuxedo Sam Deco Steam Cakes :)

Sorry that these were not very well made. I was in a huge rush when I made these steam cakes and the piping of the design went a little haywire towards the end. haha

But I figured that since I have already made them, why not share with you. So lesson learnt, dont rush through this. :P

They are however still pretty cute right?

I hope you like this recipe to make Tuxedo Sam Deco Steam Cake.

Tuxedo Sam Deco Steam Cake (1)Recipe for Tuxedo Sam Deco Steam Cake

(makes 8 medium size steam cakes)

(A) Ingredients for basic batter

  • Hotcake mix 300g (I used Morinaga brand hotcake mix *see pic reference below)
  • Plain low fat yoghurt 200g (I used marigold plain yogurt with sugar) *If you are using plain yogurt without sugar, please add 100g of sugar instead of 40g stated below.
  • sugar 40g
  • baking powder 8g
  • salad oil 2tbsp
  • egg (small) 4
  • vanilla essence 0.5 tsp

(B) Ingredients for colouring batter

WHITE

  • 1.5 tsp cake flour

YELLOW

  • 0.5 tsp cake flour
  • yellow icing colour

PINK

  • 0.5 tsp cake flour
  • pink icing colour

BLACK/DARK BROWN

  • 0.5 tsp black cocoa powder

BLUE

  • blue icing colour

Method

1. In a large bowl, mix all the wet ingredients well. Then add in the hotcake mix and baking powder.

2. Scoop out 3 tbsp of batter in a bowl, add in 1.5tsp of cake flour. Mix well. This is the white batter for the tummy and sailor hat.

3. Scoop out 2 tsp of batter in a small bowl, add in 0.5 tsp of cake flour and some yellow icing colour. Mix well. This is the yellow batter for the beak.

4. Scoop out 2 tsp of batter in a small bowl, add in 0.5 tsp of cake flour and some pink  icing colour. Mix well. This is the pink batter for the bow tie and hat.

5. Scoop out 2 tsp of batter in a small bowl, add in 0.5 tsp of black cocoa powder. Mix well. This is the black batter for the eyes.

6. Transfer each of the white and coloured batter into separate small piping bags.

7. To the remaining batter in Step 1, add in blue icing colour. Mix well. Divide the batter into 8 muffin cups. Fill the cups to about 75% full. Tap the bottom gently a few times to remove the trapped air bubbles.

8. Pipe the designs on the batter in the cups. Starting from the tummy, followed by the bow tie, beak and eyes. Tuxedo Sam Deco Steam Cake (2)

9. Place the steam cakes on a steamer rack and steam at low heat for 15 mins. Remove when cooked. Tuxedo Sam Deco Steam Cake (4)

Point:

  • It is good to place each of them in a holder/container. This prevents the paper muffin cup from expanding too much, keeping your design intact.
  • Please ensure that the pot is high enough as the cakes will rise when steamed.
  • Highly recommend to cover the pot lid with a steamer cloth to prevent water from dripping onto the cakes which will spoil the design and cause sinking, or the cake to split apart.

10. On a sheet of non-stick baking paper, using the remaining batter, pipe in 8 sailor hats using the white and pink batter. Place the sheet on a small tray or plate, then on the steamer rack to steam at low heat for about 2.5mins. Tuxedo Sam Deco Steam Cake (3)

11. Remove the pieces from the baking paper and assemble them on your cakes from step 9 to complete Tuxedo Sam character.

Have fun making these cute Tuxedo Sam deco steam cake.

By the way, do you know Tuxedo Sam? He is a cute penguin character from Sanrio. Also a friend of Hello Kitty, Tuxedo Sam is bear his signature look of blue and white, with his sailor hat and bow tie.

9. Be creative and have fun with your creation, you can even write text etc.

10. Place the steam cakes on a steamer rack and steam at low heat for 12 mins.

Point:

Steam cakes (mushipan) are so fun to make and they make great breakfast or even little presents/sweets to give away or for parties. I also like how the cleaning up is generally quite easy.

Doraemon Steam Cake (2) I made Doraemon Deco Steam Cakes (or Deco Mushipan). It has been a while since I made such deco and character design steamed cakes.

Recently Daniel Food Diary was really kind to purchase 5 of my Kawaii Bento Cookbook for giveaway (now closed) on his Facebook. And in his question posted to the participants, he asked the readers to share what bento they would like me to make. Several mentioned Doraemon.

While this not a Doraemon Bento, I hope those who like Doraemon characters will like this creation!

Plus I also included the recipe in this post and step by step photos to make these Doraemon deco steam cakes :)

Doraemon Steam Cake (1)I decided to make these deco steam cakes this morning partly because I have yogurt left in the fridge and I needed something for breakfast.

And somehow, the Doraemon character came to my mind. Plus it is round in shape, which makes it easier to create the character design on the steam cakes.

If you do however wish to see Doraemon Bento, here is one!

I promise I will make more Doraemon Bentos soon!

Made these last week as small gifts for the filming director, crew and coordinator who worked with me for the shooting that took place on Sunday. As a small omiyage from me, I hope they will enjoy this kawaii steam cakes.

I tried to make Brown from LINE app, heheh, not sure if the resemblance is there, but in any case, I think they are quite cute simple as bear character too.

It will be a crazy month for me and I mgiht not be able to post as regularly so I apologise in advance for that. Hope you will enjoy this recipe post today.

As I was in a rush of time making this, I used my usual Morinaga steam cake recipe to create the character. I included some step by step pictures as well as the ingredients details below for you.

What is different this time is that I also included some troubleshooting tips which you may find useful :)

Recipe for LINE App Brown Bear Steam Cakes (Japanese mushipan)

Ingredients (makes 7-8)
For main cake dough
Morinaga hotcake mix 150g
sugar 50g
plain yogurt (no sugar) 100g
salad oil 1tbsp
eggs (small) 2
baking powder 5g
cocoa powder 1tbsp
For features
dark/black cocoa powder 0.5tsp
cake flour 0.5tsp

Method
1) In mixing bowl, add in Morinaga hotcake mix, sugar, plain yogurt, salad oil, eggs and baking powder. Mix well.
2) Scoop out 2 x 2tsp of the mixture into 2 small bowls.
3) To the remaining mixture from step 1, add in cocoa powder (you may wish to sieve if your cocoa powder is clumpy). Mix well.
4) From step 3, Divide the mixture into 7-8 small muffin cups. Knock the cups gently on the tabletop to remove the trapped air bubbles.
5) Pipe the remaining mixture onto a sheet of baking paper of round circles. This is for the bears’ ears. I  placed the baking sheet on a small metal tray
6) To step 2, add in 0.5tsp of dark/black cocoa powder and 0.5tsp cake flour respectively. Mix well and transfer each into small piping bags.
7) Pipe the designs onto the dough from step 3 to create the bear character.
8) Steam the cakes on a steamer rack at low heat in a pot for 10-12mins. The pot lid should be wrap with a steamer cloth.
9) To step 5, place the tray with the baking sheet and piped dough circles on the steamer reack and steam at low heat for 2mins.
10) Make small insertion cuts on the top of the steamed cakes and insert the bears’ ears.

Troubleshooting
- If your features look like they smudged, this means that the dough (step 6) was too think in consistency. You may need to increase the dark/black cocoa powder or cake flour accordingly.
- If the features ‘sunk’ in after steaming, this means that the dough (step 6) was too thick in consistency, please adjust accordingly
- If you are using plain yogurt with sugar, please reduce sugar from 50g to 20g
- No steamer cloth? Try tying a good cotton cloth over the pot lid instead.

My Melody Raspberry Steam Cakes (Japanese mushipan)! A no bake recipe that is easy and super fun to make.

Do you know My Melody? She is a character created by Sanrio, a little girl rabbit that always wears a pink or red hood that also covers her ears.

I love my food cute! :P

Decided to take a rest from bento making today and made these Japanese steam cakes this morning!

今日はマイメロディの蒸しパンを作りました。今度新しいレシピを試しました。得意になった、レシピは投稿します。今回はブラックココアパウダーをつかないので、木炭粉を使いました。そして、ラズベリーピューレを生地に入れたんです。

Doing some recipe testing this time round so I did not include the tutorial this time. I didn’t think that they are perfect yet, so once I refine and do some adjustments to the recipe, I hope to make and post again.

My steam cake recipes so far use Morinaga hotcake mix, the texture of the cooked steam cake resembles our local Ma Lai Gao (as in Malay cake).

Here is showing how the cake texture looks like when cooked.

I do hope to work on a non-hotcake mix recipe and if it is successful I will share more with you :)

What I did differently today, is to use charcoal powder in replacement of dark cocoa powder. I would recommend the latter, however as dark cocoa powder is not available in Singapore, so I wanted to see if there could be a replacement for it.

So, in today’s My Melody steam cakes, the dough for the eyes and mouth features had charcoal powder added to it.

I also used freshly blended raspberry puree for the pink dough!

This is a photo of the cakes before going into the steamer.

For the hotcake mix recipe steam cake, please refer to my earlier Kiiroitori Steam Cake recipe here.

As promised, here is the Kiiroitori Japanese Steam Cakes (mushi-pan) recipe for you.

This is super easy and follows very closely to my earlier steam cakes recipes. The base of the dough is made of hotcake mix and yogurt – yummy and healthy! This is also a no-bake recipe, which I know some of you would like!

The texture of the cakes resembles our local Ma Lai Gao (as in Malay Cake). :)

今日はキイロイトリの蒸しパンの作り方を紹介しました。ホットケーキミックスとヨーグルトを使いました。このレシピは簡単し、おいしかったんです。皆さんは作ってみてください。

I hope to do a twist to my steam cake recipes soon, but in the meantime, I always go back to this trusty recipe that works all the time.

Am also happy that several blog followers have tried my steam cake recipes with success! Yeay! If you have tried making them too, let me know how it goes. One of them was so creative and even made domo-kun versions which were very cute.

もしみなさんは作ったら、知らせてくださいよ。

Recipe for Kiioritori Japanese Steam Cakes (mushi-pan)

レシピ・キイロイトリの蒸しパンの作り方

Makes 8 medium steam cakes
*the muffin cups are about 6cm diameter and 3.7cm tall.

Ingredients
(A)
Hotcake mix 150g (I used Morinaga brand hotcake mix)
Plain low fat yoghurt 100g (I used marigold plain yogurt with sugar)
*If you are using plain yogurt without sugar, please add 50g of sugar instead of 20g stated below.
sugar 20g
baking powder 5g
salad oil 1tbsp
egg (small) 2
vanilla essence 3~5 drops

For eyes/nose/feet details:
(B)
dark cocoa powder 0.5tsp
plain flour 0.5 tsp
red icing color
yellow icing color
(I used Wilton icing colors)

Method
1.Add all ingrdients (A) in a large mixing bowl and mix well.
2. Scoop 2tsp of the dough mixture from step 1. Add red and yellow icing colors and add 0.5 tsp of plain flour, mix well to color it orange.
3. Scoop 2tsp of dough mixture from step 1 and add 0.5tsp dark cocoa powder, mix well.
4. Divide the remaining dough mixture from step 1 into 8 medium cupcake cups. Fill each to about 70% full. Set aside.
Point:
  • Knock the base of the cupcake cups to remove air bubbles.
5. Place the orange dough and black dough from step 2 and step 3 into 2 separate piping bags.
6. Draw the patterns on top of the cupcake cups filled with dough from step 4. Over here, I started with the orange color for the nose. Followed by the nostrils, eyes and feet.
7. Place the steam cakes on a steamer rack and steam at low heat for 12 mins.
Point:
  • Please ensure that the pot is high enough as the cakes will rise when steamed.
  • In addition, highly recommend to cover the pot lid with a steamer cloth to prevent water from dripping onto the cakes. It will spoil the design and may cause sinking.

Hello everyone, for those who are celebrating Easter, Happy Easter Sunday!

It has been some time since I made mushi-pan (Japanese steamed cakes).

I am happy to share with here on my blog, a pictorial recipe guide for this Bunny Yogurt Steamed Cakes (Japanese mushi-pan). They can be made beforehand (e.g. the night before) and will be great for a breakfast or even a snack bento if you like it.

I was hoping that the blueberry jam will give it a nice purple hue but it ended up as a grey tone. Hmmm hahha, hope you still like it! :D

Get creative! you can try your own designs as well if you want.

Bunny Yogurt Steamed Cake Recipe (Japanese Mushi-pan)

Ingredients

- Hotcake mix 150g (I used Morinaga hotcake)
- Plain yoghurt 75g (the yogurt I used this time had sugar hence I reduced the sugar amount as compared to my earlier mushipan recipes)
- Sugar 16g
- Baking powder 2 tsp
- Salad oil 1tbsp
- Egg medium size 2 (58g each)
- Blueberry jam 25g
- Plain flour 2tsp
- Dark cocoa powder 0.5tsp

Method
1) In a large mixing bowl, add in hotcake mix, yogurt, sugar, baking powder, egg, salad oil and mix well.
2) If your jam has fruit chunks (like the one I used), please blend the jam
Tip: I will usually blend more than I need, as some of the jam will get stuck to the sides of the blender/container.
3) From step 1, scoop out 2 tsp of dough mixture, and 4 tsp of dough mixture into two small bowls. Add the dark cocoa powder to one and plain flour to the other, mix well.
4) To the remaining mixture in the large mixing bowl, add in the blueberry jam. Mix well.
5) Divide the dough mixture from step 4 into 4 small muffin cups until 75% full (note that you will have some spoonful of balance dough)
Tip: Gently knock the filled muffin cups on the table to remove air bubbles that may be trapped in the dough
6) From step 3, place them in small piping bags.
Tip: I usually make my own mini piping bags using baking paper, I find that the piping bags hold well and provide greater control for the drawing of the mushi-pan designs.
7) Pipe the mouth (white dough) and facial features (eyes and nose)
8) On a sheet of baking paper, pipe long oblong shapes using the blueberry dough for the ears. Pipe the white part of the ears on top (white dough).
9) Place the cakes from step 7 on a steaming rack and steam at low heat for 12 mins or until cooked through. Remove from pan when cooked and set on a rack to cool.
Tip: I usually use a steaming cloth to tie the pan cover. This prevents water from dripping onto the cakes while cooking and hence destroying the designs or causing it to split open
10) Steamed the piped shapes from step 8 (I place it on a metal tray) at low heat for 2 mins. Remove from pan and set aside to cool
11) Use a scrapper and gently remove the ‘ears’ from the baking sheet from step 10
12) Use a small scisssors and make slits at the top of the steamed cakes from step 9, slot in the ears from step 11 – Ta-Daa you are done!

The steamed cakes I made and blogged before were Totoro, Rilakkuma and Minion! :D Check out my earlier postings and the recipes here:

A long day yesterday so decided to take a break from making bento today. Sharing with you my Totoro Deco Steam Cakes that I made last Friday (didnt have time to share this earlier).

This recipe is like the one I used to make my Minion Deco Steam Cakes earlier on (Read here). Except that the decoration part is different as I need not use food coloring since all the colors can be achieved by adding cocoa/black cocoa powder.

Totoro Steamed Deco Cakes (makes about 3)
Hotcake mix 150g (I used Morinaga hotcake)
Plain yoghurt 100g (no sugar)
Sugar 50g
Baking Powder 5 g
Salad Oil 1tbsp
Egg (small) 2
Vanilla Essence 3~5 drops *optional
Cocoa Powder 1 tbsp (sieved)

For the decoration (Eyes, white tummy and marks)
Black Cocoa Powder 0.5 tsp
Cake Flour (or plain flour) 1.5tsp

(1) Hotcake mix, yogurt, baking powder, sugar, salad oil, egg, vanilla essence – Mix well to form the dough (DO NOT ADD ANY COCOA YET)

(2) Scoop 6tsp of the dough mixture and add 1.5 tsp of cake flour
(this is for white eyes/body part for Totoro)

(3) Scoop 2tsp of dough mixture and add 0.5tsp black cocoa powder
(this is for the eyes and lines on the body for Totoro)

(4) Add Cocoa powder to the remaining of (1) and mix well. Divide them into your muffin cups.
Fill them to about 70-75% full. Leave about 2 tsp of dough mixture side , put them into small piping bag.

(5) on a small sheet of cooking sheet, pipe (4) into small leaf-like shapes, this is for the ears of totoro. Place the sheet on a metal tray or plate and steam for 2-3 mins.

(6) Put (2) and (3) into separate small piping bags

(7) Use the small piping bags, draw the patterns on top of your dough mixture in the muffin cups, forming the totoro character.

(8) Place them on a steaming rack and steam at low heat for about 18 mins (I used larger muffin cups this time, hence the longer cooking time)
*Recommended to cover your steamer cover with a cloth to prevent the water from dripping on to your cakes.
