Tsum Tsum Sushi Rolls! 1041250A-50CB-495F-92CC-948EC6414141One of my new year resolutions is to give my  blog greater attention and more love. After my leg injury last year, it has been rather difficult getting back my mojo to blog regularly – an affair that I used to do almost daily.

So starting today, I will be sharing many of the postings that I have made but had not the chance to post them here. I have been posting much more regularly on my Instagram than my blog over the past one year :P.

Many of you would know that I enjoy making decorative sushi rolls, also known as kazarimaki sushi. My second cookbook ‘ Kawaii Deco Sushi’ was dedicated solely to recipes for decorative sushi rolls.

I also like to create Disney characters in my sushi rolls. Especially Tsum Tsum characters.

Being cute and roundish in shape – making them easier to be replicated in sushi rolls.

To start the week, let us enjoy some lovely Disney Tsum Tsum Sushi. I cannot decide which ones I like better, so here a compilation of some of the Tsum Tsum sushi I made.

Frozen series~~~ Elsa the Snow Queen, Anna and of course, the adorable Olaf.

We have good old Winnie the Pooh and friends!

Here is Mickey and Minnie together with Donald and Daffy. 

And not forgetting the Disney princesses – Tinkerbell, Snow White and Sleeping Beauty.

Ever since I started my journey in bento making, I remained very thankful to the various opportunities I have received.

So imagine my excitement when I was invited to Tokyo to teach a kazarimaki sushi  workshop. Thank you Japan Awaits for hosting me.

I hope I will have the chance to teach in Tokyo again soon.

Here are some photos from the workshop from one of the sessions. It was so much fun teaching everyone – thank you so much for coming.

IMG_6656I made numerous Tsum Tsum bento / foodart / sushi  etc, that I have already lost count. Many of them have been posted on my Instagram, at least for the last 3 months or so after my leg injury.

Here is a brand new post on Mermaid Tsum Tsum Bento!

I wanted a breakaway from the usual Tsum Tsum characters like Mickey, Minnie, Pooh… you get the drift. And decided to make the Little Mermaid Tsum Tsum characters.

Partly I was inspired by the cute glass bottle decoration that I got at 3 coins in Japan, it has sand and cute little seashells. Also also because the weather has been crazy warm these days and I really would want a dip in the pool.

There are many characters of the Little Mermaid Tsum Tsum series, but since I am only making one lunchbox, I decided on Ariel the mermaid, Sebastian and Flounder.

Hopefully next time I will make Ursula too. haha. IMG_6660

I always try my best to use natural ingredients to colour and complete the characters in creating my cute bento lunches. With the exception of Flounder’s fine details, most of everything else is made with natural food ingredients).

  • Ariel (face=rice + ground roast sesame, hair = beetroot udon noodles, eyes/nose=sushi seaweed, star = egg sheet)
  • Sebastian (face=rice + ebikko, pincers= tomato, eyes/mouth= sushi seaweed)
  • Flounder (face=rice + egg yolk, fins=egg white with blue food pen, eyes mouth= sushi seaweed)

I think the most tricky part of this Little Mermaid Tsum Tsum bento wrapping the noodles around the rice ball to form Ariel’s hair. haha.

The side dishes included mizuna salad, lettuce, boiled egg and otah (spicy mackerel fishcake).

Tsum Tsum Sushi Dango (2)Tsum Tsum Sushi for lunch.

Getting back to the bento/foodart making groove for a bit before the long weekend. WOO HOO! Totally love long weekends~~

Have got to enjoy it while it last since the beginning of the new year has lesser public holidays.

I baked some Tsum Tsum bread but that will be for tomorrow’s posting. (Super excited though and can’t wait to share them with you).

But first, sharing with you these cute dango sushi balls, designed and created to look like the characters from Tsum Tsum Disney game.Tsum Tsum Sushi Dango (1)

Can you recognise all of the Tsum Tsum characters?

We have Piglet, Pooh Bear, Donald Duck , Mickey, Daisy Duck and Pluto Dog.

Mainly made out of sushi rice, I coloured most of them naturally except the ears of piglet where I used some pink colouring to achieve the darker tone. You can use other ingredients like ham to make the ears.

I shape the sushi rice into balls of around 30-35g, and added the details using sushi seaweed/slice cheese etc. 

The side dishes for today’s Tsum Tsum sushi lunch are some sauteed vegetables, with prawns and egg. You can pair the sushi with your own favourite side dishes/meat etc.

Used my sushi board from Bento & co today.

Mickey and Minnie Tsum Tsum Bento.

This time in Japan I didn’t get to go to Disneyland, also didn’t plan for it since I was travelling alone. But I got to visit a few Disney stores and managed to get some of these new cute kitchenware/cutlery.

I picked up the Tsum Tsum chopsticks at Disney store located at Tokyo Skytree Solamachi, (also spotted them at Disney store in Yokohama).

Aren’t they cute. There are also designs in spoons and forks too. 

For today’s bento, I made two rice onigiris into Mickey and Minnie Tsum Tsum character.

Its quite straightforward, shape the larger circle for the head and two flat small discs for the ears, then wrap the needed parts with seaweed.

The eyes and nose were also seaweed which I cut out using small scissors. (I later realised that I forgot Minnie’s eyelashes OOppps).

Can you tell what Minnie’s ribbon bow is made of? Yes its the red layer of imitation crabstick.

 

And of course part of my trip is often to stock up on the latest cute food and kitchen stuff. So I was really thrilled when I spotted these Mickey and Minnie mini sausages again at a local supermarket in Shizuoka.

The Disney character prints on the sausages are really cute.

On the way leaving Japan back to Singapore, I was also super thrilled to discover this cute Mickey soy dish at Haneda Airport and immediately got one.

They even have Minnie version in pink but I figured that I was happy with just the Mickey soy dish.

Winnie the Pooh Disney Tsum Tsum Deco Steam Cake Recipe (7)

It is definitely a therapeutic process for me (okay.. maybe except the washing :P) lol.

I have made a few Tsum Tsum bento lunch boxes already, so its time to make something else but Tsum Tsum design :D

Winnie the Pooh Disney Tsum Tsum Deco Steam Cake Recipe (6)

Disney Tsum Tsum, the popular  LINE game is translated as ‘Disney stack stack’,  involves linking up at least 3 of the same characters that causes them to ‘explode’, gaining points and coins in the process.

Doesn’t the photo above look just like the Disney Tsum Tsum game, all stacked together :D

The Winnie the Pooh Tsum Tsum series is one of my favourites. I find Pooh bear, Piglet, Eeyore and Tigger Tsum Tsum all so cute.Winnie the Pooh Disney Tsum Tsum Deco Steam Cake Recipe (12)

Back to the recipe~~

Those of you who have been following my blog, would probably be familiar with my deco steam cake, or called deco mushipan in Japanese.

Using hotcake mix and yogurt as the base, this no-bake recipe is super easy to make, healthy and yummy.

Recipe – Disney Tsum Tsum Deco Steam Cake

Makes approx 8, 2 per character

(A) For basic batter

  • 300g Hotcake Mix
  • 40g sugar *If you are using plain yogurt without sugar, please add 80g of sugar instead of 40g stated.
  • 200 g non fat or low fat yogurt (with sugar)
  • 1 tsp vanilla bean paste or 8-10 drop of vanilla essence
  • 2 tbsp salad oil (or replace with vegetable, non flavour oil)
  • 4 small size eggs
  • 7g baking powder

(B) For the details and designs

Black batter

  • 0.5 tsp black or dark cocoa powder

White batter

  • 1 tsp cake flour

Dark pink batter

  • 0.5 tsp cake flour
  • pink icing food colour

(C) For the coloured batter

  • yellow icing  food colour
  • pink icing food colour
  • purple icing food colour
  • red + yellow icing food colour (or orange icing food colour)

(D) for the ears

For the ears

  • 0.5 tsp cake flour x 3
  • Dough for the ears

Method

1. Make the basic batter (A). All all the wet ingredients together, mix well. Then sift in the hot cake mix and baking powder in 2-3 parts. Fold till incorporated.

2. Black batter – Scoop out 2 tsp of basic batter and add in 0.5 tsp dark/black cocoa powder. Mix well and transfer into a small hand rolled piping bag made from parchment paper.

3. White batter – Scoop out 4 tsp of basic batter and add in 1 tsp cake flour. Mix well and transfer into a small hand rolled piping bag made from parchment paper.

4. Dark pink batter – Scoop out 2 tsp of basic batter and add in 0.5 tsp cake flour and pink icing colour. Mix well and transfer into a small hand rolled piping bag made from parchment paper.

5. Divide the remaining basic batter into 4 portions and add in the colours (C) for the the various coloured batter Winnie the Pooh Disney Tsum Tsum Deco Steam Cake Recipe (5)

6. Fill the muffin cups to about 80% full. Important Note: You will need to leave some extra orange, yellow and purple batter for the eyes, just about 1.5 tsp or so. Winnie the Pooh Disney Tsum Tsum Deco Steam Cake Recipe (4)

7. To each of the remaining batter (yellow, orange, purple), add in 0.5 tsp cake flour. Mix well and transfer each into a small hand rolled piping bag made from parchment paper.

Now you are ready for the second part.

8. Pipe the details using the various colours. Try to keep the lines fine. Winnie the Pooh Disney Tsum Tsum Deco Steam Cake Recipe (2)

Tip: If you really make a mistake, you can use toothpick to help adjust or even scoop out the batter a little.

9. Place the steam cakes on a steamer rack and steam at low heat for 16 mins.

Point:

It is good to place each of them in a holder/container. This prevents the cup from expanding too much, keeping your design intact. 

Please ensure that the pot is high enough as the cakes will rise when steamed.

In addition, highly recommend to cover the pot lid with a steamer cloth to prevent water from dripping onto the cakes. It will spoil the design and may cause sinking, or the cake to split apart. 

10. Make the ears of the characters. Pipe the coloured batter from step 7 on good quality parchment paper. I usually like to pipe extra so that I can pick and choose the ears that look good and with the right size.

11. Steam each for about 3 mins. I place the parchment paper on a small flat plate or tray to steam on the steaming rack.

12. Using a small sharp scissors, cut a shallow slit where the ears are to be and slot them in to complete the characters

Pooh Tsum Tsum Bread Recipe (3)Pooh Tsum Tsum Bread Buns!!

Featuring the characters from Winnie the Pooh including Pooh bear, Tigger, Eeyore and Piglet.

Most of the colours were achieved naturally using dehydrated vegetable powders, so they are not only cute, colourful but also healthy!

Really happy that the buns were still so soft and fluffy even on the next day, I hope you will have fun making these stackable pullapart bread buns~

Do try making them too. I have included the recipe below as well as some pictures on the arrangement of the bread before baking.

Thanks to their inspiration I started to make character 3D breads and pull-apart bread buns recently too.


Recipe Pooh Tsum Tsum Bread

Recipe Post – Pooh Tsum Tsum Bread

(A) Winnie the Pooh *makes 3 buns

  • 80g bread flour (divided into 2 portions fo 40g each)
  • 2 tsp pumpkin powder
  • 1/2 tsp instant dry yeast
  • 1/2 tbsp sugar
  • 11g beaten egg
  • 1/2 tbsp condensed milk
  • 35~37ml warm water (40C)
  • 15g unsalted butter
  • 1/2 tsp salt

(B) Eeyore *makes 3 buns

  • 80g bread flour (divided into 2 portions fo 40g each)
  • 1.5 tsp purple sweet potato powder
  • 1/2 tsp instant dry yeast
  • 1/2 tbsp sugar
  • 11g beaten egg
  • 1/2 tbsp condensed milk
  • 35~37ml warm water (40C)
  • 15g unsalted butter
  • 1/2 tsp salt

(C) Tigger *makes 3 buns

  • 80g bread flour (divided into 2 portions fo 40g each)
  • 1.5 tsp carrot powder
  • 1/2 tsp instant dry yeast
  • 1/2 tbsp sugar
  • 11g beaten egg
  • 1/2 tbsp condensed milk
  • 35~37ml warm water (40C)
  • 15g unsalted butter
  • 1/2 tsp salt

(D) Piglet *makes 2 buns

  • 40g bread flour (divided into 2 portions of 20g each)
  • 1/2 tsp instant dry yeast
  • 1/2 tbsp sugar
  • 11g beaten egg
  • 1/2 tbsp condensed milk
  • 35~37ml warm water (40C)
  • some pink food coloring
  • 7g unsalted butter
  • 1/4  tsp salt

Method

*Do give yourself sufficient time to do and prepare the various coloured dough, so that you have enough buffer in between to shape and make the bread buns, without causing the bread dough to over ferment. Over fermentation will mean that your bread will be wrinkled and also drier when baked.

Making Winnie the Pooh and Eeyore:

1. In a bowl, place half the flour and add in the ingredients listed under (A) except unsalted butter and salt. Mix well and vigorously to activiate the yeast. Then add in the remaining half of the flour, unsalted butter and salt. Mix until most of the bread dough some together.

2. Using a scrapper, scrap all the dough mixture onto your work top. Knead until the bread dough is stretchy, smooth and does not stick to your hands. It should take you about 5 mins only as the portion is small.

3. Shape into a round ball, place inside the bowl. Cover with cling wrap and let it rest for about 40mins for first fermentation. I like to keep the dough in the warm place in the house, for example. Inside the microwave (not switched on).

* Preheat your oven to 170C

* Repeat for Eeyore using the same method with ingredients listed under (B).

4. After the first fermentation, the dough will double in size. You can also do the dough check. Punch out the gas and reshape into a round ball. Divide the yellow dough into 3 equal parts, and the purple dough into 3 equal parts. Each of them should be around 54-56g. Cover and let the dough rest for about 10mins (bench time).

5. Shape the bread dough into Winnie the Pooh and Eeyore. You can alternate the coloured dough like mine.

*Tip: You can gently arrrange some aluminum foil to give some support for the ears, if not might roll off the bread buns when you bake them. 

6. Bake the bread buns for about 12mins at 170C. At the last 2 mins, gently cover with a sheet of aluminum foil to avoid browning of the bread buns.

Making Tigger and Piglet

1. In a bowl, place half the flour and add in the ingredients listed under (C) except unsalted butter and salt. Mix well and vigorously to activiate the yeast. Then add in the remaining half of the flour, unsalted butter and salt. Mix until most of the bread dough some together.

2. Using a scrapper, scrap all the dough mixture onto your work top. Knead until the bread dough is stretchy, smooth and does not stick to your hands. It should take you about 5 mins only as the portion is small.

3. Shape into a round ball, place inside the bowl. Cover with cling wrap and let it rest for about 40mins for first fermentation. I like to keep the dough in the warm place in the house, for example. Inside the microwave (not switched on).

* Preheat your oven to 170C

* Repeat for Piglet using the same method with ingredients listed under (D). The portion is only half that of Tigger.

4. After the first fermentation, the dough will double in size. You can also do the dough check. Punch out the gas and reshape into a round ball. Divide the orange dough into 3 equal parts, and the pink dough into 2 equal parts. Cover and let the dough rest for about 10mins (bench time).

5. Shape the bread dough into Tigger and Piglet. I chose to make the Tigger as pull-apart bread and piglet separately. I would recommend making Piglet together too.

8. For Tigger, I used some egg sheet, ham, edible pen for the details.

Note: Let the bread buns cool down first before drawing the features or to stack them together :)

Frozen Tsum Tsum Bento (5) Frozen Tsum Tsum!

Another Tsum Tsum bento~ featuring the characters from frozen including Olaf, Anna and Elsa.

As mentioned in my earlier blog post, Tsum Tsum that started out as a LINE game gained international popularity. The game which is titled Disney Tsum Tsum,  translated as ‘Disney stack stack’,  involves connecting at least 3 of the same characters that causes them to ‘explode’, gaining points and coins in the process.

In the Tsum Tsum game, the Disnet characters all have a distinctive look. A much more kawaii plump version of their original selves. They also resemble plush little beanies.

In my earlier Tsum Tsum bentos, I have made e characters including Mickey, Pooh, Piglet, Perry, Donald, Stitch, Mike Wazowski, Chip N Dale.

So this time I decided to go with these cute characters from Disney animation, Frozen.

Hope you can recognise (front to  back) Anna, Elsa and Olaf the Snowman :)

I had fun making all these cute riceball sushi~ I had so much rice left from gathering. So decided to might as well pack a bento this morning.

The ingredients for the characters included:

Elsa the Snow Queen Tsum Tsum

  • rice mixed with a little ketchup (head)
  • white egg sheet (hair)
  • seaweed (eyes and eyebrows)

Anna Tsum Tsum

  • rice mixed with a little ketchup (head)
  • brown egg sheet (hair)
  • seaweed (eyes and eyebrows)

Olaf Tsum Tsum

  • rice (head)
  • white egg sheet (front teeth)
  • seaweed (eyes and eyebrows)
  • carrot slice (nose)

So as you can see, the ingredients are actually very simple. Not too complicated. I managed to make this bento with the side dishes in about an hour. And the sides included deep fried minced pork patties, mizuna and cherry tomatoes side salad, fruit salad.

Tsum Tsum Bento!

Tsum Tsum is definitely one of the hottest things now (aside from Gudetama,… haha).

Started out as a LINE game, this Disney mobile game became a hit with people across the globe playing this stacking game. Titled Disney Tsum Tsum, which is translated as ‘Disney stack stack’, the game involves connecting at least 3 of the same characters that causes them to ‘explode’, gaining points and coins in the process. The longer the chain, the more you earn.

These cute Disney characters are all kawaii version of their original self, looking more baby like, and shaped like plush little beanies stacked on top of each other.

I have been putting off making Tsum Tsum, except a handful bento earlier but felt like creating one this morning!

Have you played Disney Tsum Tsum before?

Here is a glimpse of the game.

This is so popular that the game has spin off merchandise and products based on Tsum Tsum Disney characters.

It is pretty amazing the number of characters that have been already introduced into the game.

To make this Tsum Tsum Bento, the characters were shaped using Japanese rice.

I managed to make them in decreasing sizes, stacked on top of each other.

A total of seven Tsum Tsum characters. (Bottom up) Mickey Mouse, Donald Duck, Stitch, Winnie the Pooh, Piglet, Mike Wazowski (from Monsters Inc) and Perry (from Phineas and Ferb). The last two characters were actually not as familiar to me.

One of the most tricky part of making this Tsum Tsum bento is to ensure that all of them fit all inside the box.

But I managed to do it! So happy.

I did however wishes that I used ham for piglet’s nose instead as the pink kamaboko sort of ‘disappeared’ on the pink rice :P

The side dishes included sauteed pork slices, mizuna salad with cucumber and cherry tomates and some fruits.

Packed this Tsum Tsum bento in my white monbento box.

Tea towel is from ihanna, cute design right?

You might also noticed some slightly different way of taking my photos. Been playing around with a set of Nikon J4 camera and Nikon’s macro lens.

Still trying to get used to using a camera versus my usual iPHone. I do like the narrow depth of field effect in the photos :)

Chip n Dale Tsum Tsum Bento!

What is Tsum Tsum??

Recently LINE: Disney Tsum Tsum has caught on a fever after the mobile game app by Disney Japan became really popular. Disney Tsum Tsum which is translated as Disney stack stack is a game that involves stacking and connecting the characters to gain points in the game.

Its phenomenal popularity also meant that there were even plush toys looking like the Tsum Tsum Disney game characters sold in stores. I saw these cute plush toys when I visited Tokyo earlier this month. Check out the Disney store website.

 

Chip Dale tsum

So today I decided to make a bento inspired by the Disney Tsum Tsum game.

Since I am still trying to make a Autumn bento before all the winter and Christmas theme bento, I made Chip ‘n’ Dale characters in this bento. Chip n Dale always makes me think of autumn.

The ingredients for Chip n Dale were rice, katsuobushi*, teriyaki sauce, seaweed, cheese, crabstick, ham.

Katsuobushi is shaved bonito flakes, commonly served on takoyaki and okonomiyaki.

The side dishes were mushroom minced meat patties, sauteed sweet peas with carrots and mushrooms, edamame beans and lettuce. Those cute autumn leaves are something like mochi slices.

The bento was packed in my white Noda Horo enamel box bought from Japan. I use some wax paper to line the box and some wooden cups to hold the side dishes.
