トトロのデコ蒸しパン Totoro Deco Steam Cake

A long day yesterday so decided to take a break from making bento today. Sharing with you my Totoro Deco Steam Cakes that I made last Friday (didnt have time to share this earlier).

This recipe is like the one I used to make my Minion Deco Steam Cakes earlier on (Read here). Except that the decoration part is different as I need not use food coloring since all the colors can be achieved by adding cocoa/black cocoa powder.

Totoro Steamed Deco Cakes (makes about 3)
Hotcake mix 150g (I used Morinaga hotcake)
Plain yoghurt 100g (no sugar)
Sugar 50g
Baking Powder 5 g
Salad Oil 1tbsp
Egg (small) 2
Vanilla Essence 3~5 drops *optional
Cocoa Powder 1 tbsp (sieved)

For the decoration (Eyes, white tummy and marks)
Black Cocoa Powder 0.5 tsp
Cake Flour (or plain flour) 1.5tsp

(1) Hotcake mix, yogurt, baking powder, sugar, salad oil, egg, vanilla essence – Mix well to form the dough (DO NOT ADD ANY COCOA YET)

(2) Scoop 6tsp of the dough mixture and add 1.5 tsp of cake flour
(this is for white eyes/body part for Totoro)

(3) Scoop 2tsp of dough mixture and add 0.5tsp black cocoa powder
(this is for the eyes and lines on the body for Totoro)

(4) Add Cocoa powder to the remaining of (1) and mix well. Divide them into your muffin cups.
Fill them to about 70-75% full. Leave about 2 tsp of dough mixture side , put them into small piping bag.

(5) on a small sheet of cooking sheet, pipe (4) into small leaf-like shapes, this is for the ears of totoro. Place the sheet on a metal tray or plate and steam for 2-3 mins.

(6) Put (2) and (3) into separate small piping bags

(7) Use the small piping bags, draw the patterns on top of your dough mixture in the muffin cups, forming the totoro character.

(8) Place them on a steaming rack and steam at low heat for about 18 mins (I used larger muffin cups this time, hence the longer cooking time)
*Recommended to cover your steamer cover with a cloth to prevent the water from dripping on to your cakes.

Hi, may I know whether I can substitute Hotcake mix or Morinaga hotcake with something more commonly found in markets? :)

Hi Zi Ning I have not tried other brands but I believe it should be okay to use pancake/hotcake mix of other brands.

Morinaga hotcake mix is available quite easily, u can actually get them at NTUC, Cold Storage and of course the Japan supermarkets. Its about $7 for 4 pkts of 150g.

For step (3) If you do not have dark black cocoa powder, substitute it with dark brown coloring and 1tsp of plain flour.

Hello! It’s really cute! Can I check if the batter needs to be fill up to the brim of the cup or 3/4 filled?

    • Shirley Wong
      October 22, 2013

the batter rises quite a bit, so I would recommend 3/4 :)
      thanks for the compliment!

Hi hi :) This time round for totoro, I use slighly larger cups so that it gives me more ‘surface area’ to do the drawing of totoro, but you can try the usual cupcake size. would be the same method, except that you should get perhaps about 4~5 nos instead of 3.

    Hi Shirley,

May I know for step 1), do you use an electric mixer or just manual egg beater to this step? Do I have to beat the egg until fluffy or just mixing it until well blended will do?

    • Shirley Wong
      March 12, 2014

      Hi Christina

There is no need to beat usin a mixer. I simply use a wooden spatula to mix till well blended :)

      Hi Christina

Sorry to hear that. You can reduce the baking powder to 1.5 tsp and see if that helps. The features are all drawn before steaming.

Do steam at low heat. :)

ooooh interesting :D I’m looking for recipes with no baking needed. What do you be steaming it? Do you put it in a container with boiling water inside? (sorry newbie in this kind of stuff >.<)

Hi Lui thank you so much for the sweet comment. Yes, no baking required! :) The cake dough will be pour in the muffin cups. The muffin cups will be place on a steamer rack, over some water and steam in a pot at low heat. Please take a look at this bunny mushi-pan recipe, I included step by step photos. It might give you a better idea of the steaming pot. http://littlemissonigiri.blogspot.sg/2014/04/bunny-yogurt-steamed-cake-recipe.html

Hi, is it okay to use the normal cocoa powder for the eyes instead of black cocoa powder? Or would the colour be off? thanks!

    • Shirley Wong
      May 13, 2014

      Hi Shi Qi

It is okay, just make sure that you adjust the cooa amount for the main dough under step (4). The aim here is to just make sure that the eyes are a darker shade than the body :)

Thank you so much for this posting. It is very very cute. I tried to make it today and it turns out pretty good. Just a bit soggy at the bottom of the cake when it’s taken out of the mold… Do you have any tips on how to cool it down to avoid the steam to be trapped within the mold to ‘wet’ the cake?

  • Shirley Wong
    July 22, 2014

Awww :D so happy to hear that. Would you so kindly be able to share with me your creation if you have any photos? Would love to see them – if you are okay, you can send them to littlemissbento@gmail.com

As for the wetness, the one day is to either have metal cups that you can place the muffin cup in, or to use a deeper pot so that the boiling water at the bottom will not be so near the muffin cups while steaming :) hope this helps
